Low Carb Ideas and Menus

I really need to find a way to get my weight down.   Counting calories does work, but it can be VERY time consuming.   I have gained back all the weight that I previously lost and added to it.  My knees are screaming, HELP!     And I have been retaining fluid in my ankles since I have reached this level of weight.   I'm planning a trip out West in early November and I'd really like to get rid of the weight I've gained in the last couple months.    I thought I'd try the South Beach  "Super Charged" approach. 

I bought  "The South Beach Diet: Super Charged"  at a yard sale and found that the first two weeks are very restrictive on carbs.  So I've been searching the internet for some recipes to help me out in my diet planning and came across a wonderful site developed by Linda Genaw. (Linda's Low Carb Menus and Recipes) She has listed months and months of meal plans and has recipes to go along with the plans.  I hope to be able to use a number of them in my meal plan development.

This blog is an attempt to make calorie counting easier for myself.
I've taken the meals I ate when I lost weight before and did calorie counts of the TOTALS so that I could save myself time and still have a pretty good idea of how many calories I am consuming. I began with the meals I concocted myself but plan to add more from other sources as I find time.

I've tried to label each entry so that breakfasts, lunches, snacks, dinners and so on could be easily located as needed.
